Egg Curry

It’s been a week I blogged ! Life has been busy with this and that. Such times calls for a quick and easy meal fix. Today’s recipe is mainly prepared in India and its neighbouring countries. There is no one recipe. Each state in India has its own version. Usage of locally found ingredients, spices and herbs in each recipe renders it’s uniqueness.

I drifted toward the southern parts India. This egg curry / Anda curry recipe is easy and quick to make with ingredients readily available in your kitchen and it is full of robust flavours of southern spices ! Earthy and humble !

For the masala :

2 medium sized Onions

2 large Tomatoes

2 inch long ginger

6 cloves of garlic

1/4 cup grated coconut

For Curry

1/2 TSP Fennel seeds

1/2 TSP Asafoetida/ Hing

1 inch long Cinnamon stick

1 Star Annies

2 Whole Green Cardamom

4 whole peppercorns

2 whole cloves

1 Bay leaf

5 sprigs of Fresh Curry leaves

1 Tbsp Kashmiri Red Chilli Powder

1 Tbsp Coriander seed Powder

1 TSP Garam Masala

Coriander for garnishing

2 Tbsp Oil


1. Heat a pan and add all the whole spices and few sprigs of Curry leaves. Roast on low heat.

2. Meanwhile make a paste of all the ingredients mentioned under the masala list. Make sure the paste is super fine. My grinder heats up during the grinding process. That’s how much I mince it. Add the mix to the pan.

3. Add all powdered spices and cook the mix on medium heat until it starts to release oil.

4. Add 1.5 cups of water and simmer until oil starts to float on top.

5. Cut eggs in half and at this stage you can either add it to the gravy or spread the gravy on top of it. Serve hot with roti/ bread or rice.
